  1. Preheat oven to 350°F (175°C). Line a muffin tin and place one Ritz cracker in the bottom of each spot.
  2. The Toffee: In a medium saucepan, melt butter and add brown sugar. Bring to a boil, stirring constantly for 2-3 minutes until thickened.
  3. Assemble: Drop 1 tbsp of toffee into each muffin spot. Top with 1 tbsp of chocolate chips.
  4. Bake: Place the muffin tins into the oven for 5 minutes.
  5. While baking, crush your Cadbury Mini Eggs.
  6. Remove from oven, spread the softened chocolate chips flat using a knife or back of a spoon, and sprinkle crushed mini eggs into the top.
  7. Let sit at room temp for 20 mins, then refrigerate for 30 mins until set.
